GOOD MORNING!!!

Everybody knows breakfast is important, but with our busy lives, who wants to have to think about breakfast! Just pour some cereal in a bowl and scratch it off your list, right?

Ever since I learned how processed boxed cereal is (and possibly toxic?) I've stopped eating it.  It's too expensive anyway!  I fell into a nice routine of eating oatmeal or eggs every morning.  Recently I set up a breakfast schedule and am so happy about it!  No longer do I have to think about breakfast!  After dinner I just *set out the oats to soak or the **quiche to defrost and I'm done!  Breakfast is practically on the table!  Here's what we have every morning.

Sunday: Pancakes!  
Monday: Oatmeal
Tuesday: Quiche
Wednesday: Oatmeal
Thursday: Quiche
Friday: Oatmeal
Saturday: Smoothie and hard-boiled eggs, OR spouted bagels with homemade cream cheese, OR omelette

*Oatmeal:
Pour one cup of very warm water into your pot.  Add 1 tablespoon of acid (whey, lemon juice, apple cider vinegar...).  Stir in one cup of old fashioned oats.  (I use Bob Mills.)  Let this sit overnight.

In the morning, add a pinch of salt and another cup of water.  Bring to a boil, then let simmer for five minutes.  Stir in whatever delicious add-ins you like!

  • Cream or butter are a must.  The fat helps you digest the grains AND fills you up!
  • Maple syrup or honey
  • Pumpkin puree (my new favorite!  Thanks, Kaitlin, for the great idea!)
  • Pumpkin pie spice, cinnamon, nutmeg and/or ginger
  • Berries or banana
  • Chocolate chips
  • Nuts
  • Craisins or raisins
  • Fruit Preserves and/or peanut butter (haven't tried this yet!)


**Quiche:
I use spinach or swiss chard to make a crustless quiche.  The Swiss chard recipe calls for half a bunch, so I double it and freeze it for the following week.  Several months ago, my friend brought over a huge bag of home grown Swiss chard.  I had no idea what to do with it, or even if I liked it!  I found this quiche recipe on line and fell in love!!!

P.s. One of my favorites lately has been peanut butter on a banana with a glass of whole milk. Yum!

This is awesome! Thanks for sharing. Have you ever tried the oatmeal with Bob's steel cut oats? That is what I have in hand and wonder if it would work?

Yeah, I should take a pic of the kelloggs plant that is downtown...Looks nice and toxic! ;)

I'm addicted to the coconut milk, raw egg yolk and berry smoothie every morning...It's so satisfying.

Ok, I'm going to give this a shot. I hate cereal so much I don't eat breakfast usually. The rest of the family goes through 4 boxes a week!! Oats it is... don't think I can get the kids to eat quiche yet :)
