Bread Tips!

Baking IllustratedI really enjoy making bread.  I can make whole wheat sandwich bread for $1.35 a loaf and it is DELICIOUS!!!  I am the kind of girl who needs a recipe and a lot of tips, so I'm not claiming any credit for myself here.  My favorite recipe is from Baking Illustrated, and throughout their book and magazines, I've gathered several excellent tips that I'll share with you here!

My first step is to put the oven rack in the lowest position and turn the oven on 200 for ten minutes.  This makes a great environment for the first rise.

I couldn't do this without my trusted kitchen scale!  It is so much easier to weigh the ingredients rather than measure them.  Measuring flour can be quite inaccurate, and who wants to clean up all those measuring cups!

For the first rise, I just cover the large bowl with Saran wrap. The bowl is so large that the dough never touches the top.  But when you shape the loaves and place them in pans, I've struggled with the best way to cover them while they rise.  Then I read this tip: use old bread bags!!!  I put the whole pan in an old bread bag, and using a straw- blow air into the bag before I close it tightly.  The bread has plenty of room to rise now!!



After the first rise, I move the rack to the middle position and preheat the oven.  But that leaves me without a place for my second rise!  You need a warm, moist environment that is draft-free for a good rise.  SO...I put a large Pyrex measuring cup with water in the microwave for three or four minutes.  Then I put my loaves in the microwave for the thirty minute second rise!!  (Obviously you would not turn the microwave on at this point.)



Finally, I let the loaves cook for ten minutes, then I place a thermometer inside one of them.  I set the alarm to notify me when the bread reaches 205 degrees and voila!  I have two loaves of bread!!  (I don't know why this picture is flipped.  I cannot fix it and am giving up!)






Finally, I let it cool completely.  When it is room temperature, I set the loaf square on the cutting board.  I make sure it is parallel with the sides, then position my knife.  Once my knife is lined up, I keep my eye on the far side and make sure that the knife itself is perpendicular as I cut.  I do not watch the bread.  This has been my best strategy to cutting even, thin slices.

This cracks me up-- so precise, so YOU! But what really makes me laugh is that I thought, at first, that it was a recipe for "bread tips," like beef tips, and I was excited to find out what bread tips were. :-) But what great tips I found here!

Bread tips! HA HA, Lisa!!! And bread HAS to be precise!!! This is where my obedience to directions comes in handy! :)

I LOVE making bread as well Lauren. I am definitely not as precise...have you ever made Artisan bread? It is really delicious!

I haven't,, Erika! It's never been too tempting b/c I try to stick with whole wheat as much as possible. Do you have a good recipe you could email or share with me? :)

I'll tell you- I HAVE been tempted to do the five minute a day bread. http://www.artisanbreadinfive.com/ That sounds promising- especially with little ones around in the future! But again- I go back to the whole wheat thing. The reviews I've read for their whole wheat version aren't as good. What's a whole-wheat girl to do? :)

YUMMMM. I drive to a neighboring town to buy wheat bread or multi-grain from a certain bakeshop. But, it doesn't look nearly as good as yours!

AMAZING! I adore wheat bread, always have...this post makes me want to move next store to you!

Great post! I'm feeling motivated to try making bread by hand. It just looks so tasty!

I started making bread in a bread machine a couple of weeks ago. I used the recipe in the manual and the first loaf came out super dense. I've been fiddling with the recipe ever since, and I finally got it to rise by adding more sugar--but then it completely implodes at some point. No good! but it's fun trying to figure it out:)

I do the artisan bread in five minutes, using whole wheat flour and it's great!:

3 c warm water
1 1/2 tbl yeast
1 1/2 tbl salt
3 c white flour
3 c wheat flour
1/4 c oats
1/4 c ground flax

stir together, let rise for 2 hours, then pop into the fridge. Then I just cut off a hunk, let it come to room temp in the loaf pan (about an hour), bake at 400 for 30 minutes.

I'm not nearly as precise as you (read my latest post!) but it works.

If you could show me I would love it! I love homemade bread but have never considered wheat bread - it seems as though it would be too dense.

Of course I have trouble following directions. I can do it, I just don't like to do them in the exact order they are given. Maybe I just should forget it and go to the Bread of Life store!!
